The grapes are hand-harvested and fully destemmed, followed by a 3-day cold maceration. Alcoholic fermentation occurs in concrete tanks, with temperatures ranging from 25C to 34C, lasting 15 to 20 days. Tannin extraction is gently carried out through punch-downs.

The wine is aged in French oak barrels, 15% of which are new, for 12 months. After malolactic fermentation, the wine undergoes racking and blending in stainless steel tanks over the winter on fine lees. It is then filtered and bottled.
