Altugnac Muscat Et Sauvignon Vin De Maceration 2020
This skin contact wine is made with only grapes of Muscat (70%) and Sauvignon Blanc (30%) that grow at 500 meters elevation on poor clay-limestone soils that are south-facing towards the Pyrenean mountains; the yields are meager, with an average of 45hl per hectare due to the slow ripening conditions. After the harvest, the grapes are left to macerate on their skins, Muscat and Sauvignon Blanc, together for 15 days. Alcohol and malolactic fermentation are completed using indigenous yeasts and bacteria without any use of SO2 up to this stage. After 14 days, they only use the free-run juice from the berries crushed under their weight, and there is no use of a mechanical press. The juice is left to settle and clarify for two days before being transferred into used French oak barrels. The aging usually lasts 8 to 9 months, and light filtration is done just before bottling. The wine is bottled in clear glass to show off the deep golden/orange color.
