This bio-dynamically farmed Pouilly Fuisse is from 50 year old vines around the villages of Fuiss, Solutr-Pouilly, Vergisson and Chaintr. Gently hand harvested and sorted, the wine is fermented in oak barrels (10% new) with wild yeasts for 14 months. Bottling is then carried out according to the lunar calendar on a fruit day.
Taste
Winemakers tasting note: A delicate and distinguished wine, green-gold in colour. The local soils favour harmonious development of the Chardonnay aromas with notes of hazelnut, toasted almond and mineral notes.
