The vineyard has been shaped over the centuries by the Dukes of Burgundy, by monks and by winegrowers. A bottle of Burgundy is a piece of French heritage. I chose to claim on the Bourgogne Blanc labels and not Bourgogne Cte d’Or or Bourgogne Chardonnay. My opinion is that these last two appellations impose unsustainable modes of conduct where the Bourgogne Blanc appellation makes it possible to work in a more virtuous way. With medium-wide plantations and different authorized grape varieties, for example.
