Cesar Florido, aka “Mr. Moscatel,” produces sweet, fortified wines from Moscatel grapes, which thrive in the sandy soil of Chipiona (very proximate to Sanlucar de Barrameda). Though this area is famous for Moscatel, most of it is sold to the larger houses; Florido is one of only two bodegas producing moscatel wines independent of the local co-op. The sugar laden grapes are pressed and then ferment to about 2 degrees, at which point neutral grape spirit is added to fortify the wine up to 15%, leaving a good amount of sugar in the wine. After a year of ageing in a solera, the wine is bottled and released. Sweet, slightly floral flavors of orange and peach marmelade characterize this distinctive sweet sherry.
